Important Note. The quantities listed below make one square cake. You will need to make three cakes in order to create your pyramid, so you need to have three times all ingredients listed.
• 200 g butter • 200 g caster sugar • four eggs • one teaspoon vanilla essence • 200 g self-raising flour • 100 g plain flour • jam • whipped cream • icing sugar
WHAT YOU DO
1. Preheat the oven to 160°C/Gas Mark 3, and line and grease your cake tin.
2. Mix the butter and sugar together

vigorously with a wooden spoon until it’s light and fluffy.
3. Add one egg and stir the mixture thoroughly. Repeat until all four eggs have been added, one by one. Then stir in the vanilla essence.
4. Sift the self-raising and plain flour together in a separate bowl, then gently mix it into the egg, butter and sugar mixture.
5. Pour the mixture into a 20 cm square cake tin lined with baking parchment. Bake it in the centre of the oven for about 75 minutes. You can check the cake is ready by putting a skewer into the middle of the cake – it should come out clean.
Warning. Always wear oven gloves when putting something in the oven or taking it out. Get an adult to help you.
6. Take the cake out of the oven, remove it from the tin and leave it to cool on a wire rack.

TO MAKE THE PYRAMID
The first cake will form the base of your pyramid. Place it in the centre of a cake board.
For the next layer, trim 4 cm of cake from the length and width of another cake, so that you are left with a cake measuring 16 cm x 16 cm. Spread one side of the square with a layer of jam and carefully stick it in the centre of the first layer.
