You can be certain that wild salmon is rich in omega-3s, but not as certain about farmed fish. Some fish farms feed their fish with cheaper grains (omega-6 sources) as opposed to omega-3-rich algae from the sea. Fish oil capsules are an acceptable alternative for the real thing. Since butter and the predominant fatty acids of lard are saturated fats, they are already hydrogenated and resistant to oxidation. It is oxidation of polyunsaturated fats that produces harmful substances. Butter, consisting of short-chain fatty acids, has some other unique health benefits. These much-maligned fats should be thought of as condiments that, used in relatively small portions, can add zest to ordinary foods. Trans-fats, on the other hand, are foreign to our bodies and should not be eaten.
